Ginger salad Recipe: 

Ingredients:

For the salad:

4 cups of fresh lettuce leaves (lettuce, arugula, spinach, etc.)
1 large cucumber, cut into thin circles
1 carrot, grated on a coarse grater
1 red bell pepper, sliced into half rings
1/4 cup chopped cilantro (coriander)
1/4 cup roasted cashews (optional)

For dressing:

3 tablespoons olive oil
2 tablespoons rice vinegar
1 teaspoon freshly squeezed lime juice
1 teaspoon of honey
1 teaspoon chopped fresh ginger
Salt and freshly ground black pepper to taste

Instructions:

In a large bowl, combine lettuce leaves, cucumber, carrot, bell pepper, cilantro and, if desired, fried cashews.

In a mixing bowl, combine olive oil, rice vinegar, lime juice, honey, fresh ginger, salt and pepper. Mix well.

Pour the dressing over the salad and mix gently so that all the ingredients are evenly coated with the sauce.

Serve the ginger salad immediately to preserve freshness and flavor.
